Wishing all you fellow fab moms out there an amazing Mother’s Day! I’ve got you covered this year for a perfect Mother’s Day morning, so all you have to do is print the recipe to leave a little hint! You can also make these delicious waffles with your kids for a family fun activity!
Dear dads and kids,
Diamonds and jewelry are great but what mom really wants for Mother’s Day is to sleep in!!! Dad, grab the kids and get them to help you make a delicious breakfast for mom. All you need is a few minutes and some very basic ingredients to make mom the world’s best waffles.
Servings: Makes 6 waffles
Recommended Tools: thinkkitchen Double Waffle Maker, 3 large mixing bowls (Sagetra Deep Mixing Bowl, 5 L), a whisk, a ladle and non-stick spray
- 2 cups all-purpose flour
- 1/2 cup maple sugar or white sugar
- 3 tsp baking powder
- A pinch of salt
- 3 large eggs (separated)
- 2 cups whole milk, almond, cashew or coconut milk
- 1/4 cup melted butter
- 2 tsp pure vanilla extract

Start by combining the flour, sugar, baking powder and salt in a large mixing bowl.

Use a whisk to mix it all together (this step is super kid-friendly).

In two seperate bowls, separate the egg whites from the yolks.

In the bowl with the yolks (if you don't already know, that's the yellow part of the egg) add in the milk, vanilla and melted butter, whisk together and set aside.

The secret to fluffy waffles is to whisk the egg whites until they are fluffy! (You might need to work a little harder here). You’ll know they are whipped enough when they stiffen up and you’re able to make little spikes by lightly tapping the top with the whisk.

Turn on your waffle maker and let it heat up.

Add all the liquids into the bowl with the dry ingredients and whisk together until it’s well mixed.

Gently mix the egg whites into the batter, by folding them in a spoonful at a time until they are all mixed in.

Spray the inside of the waffle maker with a non-stick spray.

Use your ladle to scoop up some batter and pour it in the middle of the waffle maker. (The quantity will depend on how big the maker and the ladle are so it’s best to start with one scoop and adjust for the following ones).

Cook each waffle for about 8-12 minutes to be perfectly crisp!
TIP: As each waffle is ready, pop it into the oven (set the oven at warm) so that they stay warm until you are done!
Voilà! Make sure to serve with a cup of fresh coffee and garnish with some berries and a drizzle of maple syrup! If you are going for extra brownie points, make sure she doesn’t do the dishes… and that sparkly piece of jewelry is a nice touch too!
