Turn your waffle maker on high and preheat your oven on to 350ºF.
Beat egg yolks, milk, butter, and vanilla.
Add in flour, cornstarch, baking powder and salt.
In another bowl, beat egg whites and sugar until stiff peaks form.
Very gently fold the egg whites into the batter. Keep the batter as fluffy as possible here.
Cook waffles in your waffle maker for 3-5 minutes. Sometimes your waffle maker will say it's done, when it's really not. You want to make sure all of the steam has escaped. This is what gives you a crispy waffle.
When waffles come out of the waffle maker, place them directly in the oven on the oven rack. This will allow any additional steam to escape and make your waffles as crispy as possible (but still fluffy in the middle.)
Serve with syrup and butter!
Syrup
Add milk, sugar, molasses, and butter into a large saucepan over medium-high heat. Whisk until boiling.
Remove pan from heat. Carefully add baking soda and vanilla. It will bubble so be careful. The bubbles will reduce while the syrup cools.
