TACO PIE
Makes 10 x 5” pies or 2 x 9” pies
Ingredients
Pastry
  • 5 cups flour
  • 2 1/2 cups shortening
  • 2 1/2 tsp salt
  • 1 1/2 cups cold water
Topping
  • 1 large Tomato
  • Lettuce
  • Sour cream
  • Green onions
  • 1 Lemon
  • 1 bunch Cilantro
  • 1/4 cup grated cheese for each pie
Filling
  • 1/4 cup chopped garlic
  • 1 medium onion
  • 2 lbs ground beef
  • 1 can black beans
  • Beef soup base
  • 1/2 cup chili powder
  • 1/4 cup cumin
  • 1 tsp pepper
Instructions
  1. Measure flour into a bowl and then add salt and mix. Cut shortening in with a fork and knife. Add approx. 1 cup water and mix lightly. Repeat with remaining water. Do not over mix. Lightly flour table and place a ball of dough and roll out. Set aside.

  2. Melt butter in a large pot. Fry onions until translucent and then add garlic stirring regularly. Add ground beef and cook until browned. Then, add black beans, beef base, chili powder, cumin and water and stir until all mixed and cook for 10 min. Cool and place in refrigerator until ready to assemble pies.

  3. Place 1/3 cup of filling into pastry inside of pie tin. Top with grated cheddar cheese. Place pastry on top and using a fork, press the bottom and top together.

  4. Bake at 350 for 45 - 60 min or freeze and bake later from frozen!
