Simmered to perfection with corn, tomatoes, and chicken and topped with cilantro, lime, and tortilla chips, this soup is the perfect comfort food! Add your own favourite toppings, a bit of cotija cheese, salsa and sour cream are all great additions! I like to create a little topping station when I serve this soup so everyone can customize it just as they like it :)

chicken thighs or drumsticks
bone in & skin

cilantro chopped and more for garnish

zested & juiced and 2 limes sliced into wedges for garnish

Heat a large pot over medium heat then add the evoo, onion, celery, carrot, jalapeño, garlic and cook until onion is softened.

Add the chicken and cook until all sides have been seared.

Add the remaining ingredients and simmer 45 minutes or until chicken is cooked through.

Remove chicken, separating the meat and removing the bones & skin. Add the meat back to the pot and simmer for 3 minutes.

Spoon soup into bowls and top with tortilla strips, lime wedges, sliced avocado & cilantro.
