Grilled Salmon with Mango Salsa

When a delicious meal is also incredibly good for you, it’s sure to become a favourite. And when it’s topped with a super flavourful mango salsa? It’s simply irresistible!

Full of Omega 3s, salmon is both nutritious and decadent—a rare combo! Pair this recipe with your favourite roasted vegetables, or with rice, quinoa, or a salad, for the perfect weeknight or date night meal.

Ready to try this tasty recipe? Here’s everything you’ll need:

Ingredients:

Grilled Salmon

3 large salmon fillets (or 4 small)

1/8 cup fresh lime juice

Zest of a lime

1 medium garlic clove, minced

3 tablespoons olive oil

Mango Salsa

1 large mango, finely diced (or 1 cup)

1/4 cup red onion, minced

1 tablespoon fresh lime juice

1 tablespoon olive oil

Salt and pepper to taste

Preparation:

Grilled Salmon:

In a small bowl, whisk together olive oil, lime zest, lime juice, and garlic and season with salt and pepper to taste (a fair amount of each). 

Place salmon in a baking dish, pour the liquid mixture over, and cover with tin foil or plastic wrap. Allow to marinate in the refrigerator for 15 – 30 minutes, then flip salmon to the opposite side and allow to marinate in the fridge for 15 – 30 minutes longer. 

Preheat a grill over medium-high heat during the last 10 minutes of marinating.

Brush grill grates with oil. Place salmon on grill and grill about 3 minutes per side or until just cooked through. The salmon is ready when the flesh flakes when lightly pressing down with a fork.

Mango Salsa:

In a medium bowl, toss together your mango, cilantro, red onion, olive oil, and lime juice. Season with salt and pepper to taste.

Pair with some delicious, nutty brown rice, with a unique salad, or with your veggies of choice, and serve with some lemon wedges on the side.
