We don’t need a holiday to celebrate food or drinks, but whenever there is one, you bet we like to celebrate! After all, life is a party right?
April 7 is National Beer day and @priscilaskitchen has the perfect recipe to pair with your favourite beer.
- 1 large sweet potato
- 1 tbsp premium extra virgin olive oil
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 green onion chopped
- Salt & pepper
- 1/4 cup grated Parmesan

Chop the potato in 1/2 inch slices and then 1/2 inch again to create a fry-like shape.

Place the potato pieces in a large bowl and sprinkle with the evoo, garlic powder, paprika, salt & pepper and half the chopped green onion. Give it a good toss so that each piece is coated.

Preheat the air fryer 4 minutes. Then fill the bin with half the potato pieces and air fry for 12 min, open the air fryer to give the potatoes a good shake and continue cooking for 8-10 minutes.

Repeat with the second batch of fries.

When all the fries are cooked, put them all back into the air fryer for 3 min to reheat the first batch.

After they are reheated, remove and sprinkle with grated Parmesan and the remaining half of the chopped green onions.

Serve with homemade lemon garlic aioli and enjoy!
- 1 egg yolk
- 1 tsp lemon juice
- 1/2 tsp Dijon mustard
- 1/3 cup premium extra virgin olive oil
- 1 garlic clove finely chopped and crushed with sea salt
- Salt & pepper

In a large bowl whisk the egg yolk, Dijon and lemon juice until well combined.

Gradually add in the evoo, a few drops at a time, while continuously whisking. If it starts to separate, keep whisking until it emulsifies. Whisk in the garlic and salt & pepper.

Serve immediately or store in the fridge up to 3 days.
