Warm & Comforting – Beef Stew with Mushrooms

As we reach mid-September, any remnants of summer weather have fully started to fade away. We have fewer and fewer rays of sunlight coming down to warm us and instead are welcoming a cool, crisp in the air, just enough to start layering an extra sweatshirt or scarf. Moving into the chillier temperatures of Autumn, it is so much more important to find ways to weave in warmth and comfort into your days and what better way to do so than with food.

Warmer, autumnal cooking can seem daunting or time-consuming or something reserved for the holiday season. However, with the right tools, it may be a lot easier than you think! This hearty, delicious beef and mushroom stew recipe is the perfect way to warm you up from the inside and as impressive as it seems, it is way less intimidating than you might think it is! Here is the recipe:

Ingredients

  • 30 ML (2 TABLESPOONS) VEGETABLE OIL
  • 30 ML (2 TABLESPOONS) BUTTER
  • 750 G (1 2/3 LB) CUBED BEEF STEW MEAT
  • 250 ML (1 CUP) BEEF BROTH
  • 1 CAN (28 OZ) DICED TOMATOES WITH JUICE
  • 45 ML (3 TABLESPOONS) TOMATO PASTE
  • 3 SPRIGS FRESH THYME
  • SALT AND PEPPER FROM THE MILL
  • 3 LARGE CARROTS CUT INTO LARGE CHUNKS
  • 2 MEDIUM RUTABAGAS CUT INTO LARGE CHUNKS
  • 2 YELLOW ONION CUT INTO QUARTERS
  • 2 MEDIUM POTATOES CUT INTO LARGE CUBES

Directions

  1. Press the SAUTÉ function and adjust the temperature to 180 o by pressing TEMP/TIMER and then +
  2. Add the oil and butter to the cooking vessel
  3. When they are hot, add the meat and brown on each side
  4. Cancel the SAUTÉ function by pressing KEEP WARM/CANCEL
  5. Press MEAT/STEW and set the cooking time to 30 minutes by pressing the – key
  6. Add the broth, tomatoes, tomato paste, thyme and potato, carrots, rutabaga, onions in quarters to the cooking vessel
  7. Season well and mix
  8. Close and lock the pressure cooker lid and position the valve to the SEALING position
  9. When the cooking is finished, keep the KEEP WARM function on for 2 minutes, then turn the valve to the VENTING position and wait 1 minute
  10. Close the lid and let stand for 10 minutes.
  11. Cancel the KEEP WARM function
  12. Open and serve
