Warm & Bright – Festive Holiday Drinks!

December winds bring a frost in the air as the city becomes blanketed the arrival of fresh snow.  Just like that, we’ve entered the Holiday season.

There is an immeasurable amount of cheer mixed with gift shopping frenzy going around as we scramble to get ready and celebrate the Holidays with our friends and family. The season can go by in a blink of an eye and too often in the rush of holiday parties and festivities, we forego the more simple, quiet nights in by ourselves or with loved ones. For those cozy nights where you want to treat yourselves or your guests to something special, this boozy hot chocolate and vegan eggnog recipe is exactly what you need to add something special.

Hot Chocolate

Ingredients:

2 cups of milk

2 tablespoons sugar

1 1/2 tablespoons Dutch-processed unsweetened cocoa powder

1/4 teaspoon cinnamon

Pinch of ground cardamom

1 ounce Kahlua coffee liqueur

Mini marshmallows, for serving

Directions:

In a medium saucepan, combine milk, sugar, cocoa powder, cinnamon and cardamom powder over medium heat until heated thoroughly. This should take 2-3 minutes.. Remove from heat and stir in Kahlua.

Serve nice and hot, topped with as many marshmallows as you can until it resembles a mountain you can ski down!

The hot chocolate is the decadent velvety hot chocolate you need to warm up this Winter. We chose to go with Kahlua liqueur in this case but you can opt for any alcohol that adds a perfect kick to a hot beverage or skip it altogether. Top your mug with as many marshmallows as you can and you’re set for a cozy night where you may or may not end up watching the entire Christmas Prince trilogy on Netflix.

Vegan Eggnog:

Ingredients:

3 cups dairy-free milk - we went with oat milk

1 14-oz can light coconut milk

4-6 Tbsp maple syrup

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1 tsp pure vanilla extract

Directions:

Add 3 cups (710 ml) oat milk, coconut milk, maple syrup (starting with the less), cinnamon, ground nutmeg, and vanilla extract to your most powerful blender.

Blend on high setting until your beverage has a creamy and smooth consistency. This should take 1-2 minutes. Once blended, taste and adjust for flavour as needed.

We served ours hot, but you can also serve it over ice! Enjoy its crisp refreshing taste!

Bonus: If you feel up to it, you can spike our vegan eggnog as well! We recommend ½ – 1 ounce of bourbon per glass!
