This cocktail is one that you make when you want to leave an impression. Bold, complex flavours with an absolutely stunning shade of pink – these cocktails are truly something special and will look and feel so luxurious.
Here’s how to make them:

Ingredients:
2 oz. roasted beet-infused gin
1 tablespoon of muddled pink pitaya or dragon fruit
½ oz. honey syrup (homemade 3:1 honey to water or store bought)
¼ oz. ginger syrup (homemade 3:2 fine sugar to juiced ginger root or store bought)
¾ oz. fresh lemon juice
Preparation:
First, start by making your roasted-beet infused gin. Place 1 pound of peeled red beets and place them on a large sheet pan lined with foil. Bake the beets in an oven heated to 400 degrees F for about 1 hour, then allow them to cool and halve them. Infuse 1 the cooled beets with 1 liter of gin in an airtight jar for 2-3 days before fine straining.
Prepare your glass by adding the muddled pink pitaya and adding some ice.
Add the rest of your ingredients to a shaker and shake with ice to chill. Strain into your glass and give it one slow stir. Serve and enjoy.
