<p>6 cups cubed watermelon</p>



<p>1/2 red onion, chopped</p>



<p>1/2 cup feta cheese</p>



<p>1/3 cup fresh mint leaves, chopped</p>



<p>3 1/2 cups Arugula</p>



<p>Balsamic vinegar or balsamic glaze, optional</p>



<p><strong><em>Preparation:</em></strong></p>



<p>In a large bowl combine your salad,&nbsp; cubed watermelon, red onion, feta, and mint. Stir until ingredients are well combined. Drizzle lightly with balsamic vinegar or glaze, if using. Serve chilled.</p>

This is the month where salads become your new best friend!<br><br>There are so many variations of salad you can make, light salads, Poke salads, heavy, chunky, chopped salads and even warm salads. Today, we’re going to share a recipe that’s super quick and easy to get started on your salad journey. This recipe has no frills or fuss but packs a punch in flavour and freshness! The best part: it’s entirely customizable! Swap out any veggies or fruits that you want to add or remove.</p>

<p><em>½ cup olive oil&nbsp;</em></p>



<p><em>1/3&nbsp; cup lemon juice</em></p>



<p><em>1 shallot, minced</em></p>



<p><em>1 Tablespoon Dijon mustard</em></p>



<p><em>1 Tablespoon honey (sub with Maple Syrup for Vegan option)</em></p>



<p><em>1/2 teaspoon dried Italian spices&nbsp;</em></p>



<p><em>½ teaspoon coarse sea salt</em></p>



<p><em>¼ teaspoon white pepper</em></p>



<p><em><br></em><em>Salad:</em><em><br></em><em>1 head romaine lettuce</em></p>



<p><em>1-2 Tablespoons capers</em></p>



<p><em>4 small cucumbers</em></p>



<p><em>1 bunch radishes</em></p>



<p><em>2 Tablespoons hemp seeds</em></p>



<p><strong><em>Preparation:</em></strong><strong><em><br></em></strong></p>



<p><em>Dressing:</em></p>



<p><em>In a small bowl, whisk all ingredients together. OR you can also put all the ingredients into a glass jar with a tight fitting lid. Shake vigorously until ingredients are well incorporated.</em></p>



<p><em>Store dressing in fridge for up to two weeks</em></p>



<p><em>Salad:</em><strong><em><br></em></strong><em>Stack romaine and julienne.</em></p>



<p><em>Thinly slice radishes by hand or use a mandoline.</em></p>



<p><em>Cut cucumbers into thin rounds or use a vegetable peeler or mandoline for long strips.</em></p>



<p><em>Mix romaine, cucumbers, radish and capers in a large bowl.</em></p>



<p><em>Sprinkle hemp seeds on top, drizzle with dressing and mix well.</em><em><br></em></p>
