<p>For the uninitiated or unfamiliar, Portuguese Piri Piri sauce is the perfect combination of tangy, zesty and spicy, it’s exactly what you need to elevate your dish from salads or eggs, to grilled meats and fish. You could buy the bottled version, but it’s so much more fun to make it yourself. Plus, it’s easier than you think! Here’s how to make it:</p>

<p><strong>Ingredients:</strong><br></p>



<p>1 red bell pepper</p>



<p>6 to 8 fresh or dried hot red chiles</p>



<p>2 garlic cloves</p>



<p>1 bay leaf</p>



<p>1/2 cup extra-virgin olive oil</p>



<p>1/4 cup apple cider vinegar</p>



<p>Kosher salt&nbsp;</p>



<p>Freshly ground black pepper</p>



<p><strong>Instructions:</strong></p>



<p>Step 1: Preheat the grill.<br></p>



<p>Step 2: Place the bell pepper on the grill over high heat and cook, turning occasionally, until blackened all over, 8 to 12 minutes. Place the bell pepper in a bowl and cover with a plate and let stand until warm. Discard the skin, stem and seeds from the pepper, reserving the flesh.</p>



<p>Step 3: In your <a href="https://www.blog.stokesstores.com/en/thinkkitchen-whiz-plus-3-in-1-blender.html">thinkkitchen Whiz blender</a>, puree the bell pepper, hot chiles, garlic, bay leaf, oil, vinegar, 1 teaspoon salt and 1/2 teaspoon pepper. <p>How many warm, cozy evenings do you look back on, being huddled around a raclette with your loved ones, waiting for the cheese to get to the perfect ooey-gooey state so you can drown your grilled meats, seafood, veggies and of course, potatoes with just the right amount of cheese (ps: there is no limit).<br><br>While some may think of raclette as only a New Year’s tradition or something reserved for a weekend at the chalet, you can just as easily recreate some of your favourite traditions at home for your family. As much as we like to think of whatever we’re cooking or grilling as simply the vehicle for as much cheese as you can eat, that doesn’t mean you have to compromise on bold flavours!<br><br>Our Piri-Piri recipe puts a fun twist on your usual raclette fare and ensures you’re truly getting the most out of your meal! Here’s how to make it:</p>

<p><strong>Ingredients:</strong></p>



<ul class="wp-block-list"><li>2 chicken breast cut into strips</li><li>1 cup Piri-Piri mix</li><li>1/2 cup melted butter</li><li>3/4 lb (340 gr) salmon fillet, sliced</li><li>1/2 cup)basil pesto</li><li>4 Italian sausages</li><li>1/2 cup maple syrup</li><li>1/2 cup extra virgin olive oil</li><li>1 lb raclette cheese</li><li>Olives stuffed with almonds, peppers or a a filling suited to your tates.</li><li>Small pickled onions</li><li>2 baguettes, sliced</li><li>A sliced bell pepper</li><li>12 blanched asparagus</li><li>12 new potatoes, cooked and sliced in half</li></ul>



<p><strong>Preparation:</strong></p>



<ol class="wp-block-list"><li>Mix the chicken strips with the piri-piri with the melted butter. Leave to marinate for 2 hours.</li><li>Gently mix the slices of salmon with the pesto and marinate for two hours.</li><li>Remove the sausage meat from these casings and form small balls. Toss meatballs with maple syrup and olive oil.</li><li>Skewer the chicken strips and place them on a baking sheet lined with parchment paper.</li><li>Place the meatballs on another baking sheet lined with parchment paper and cook the chicken and meatballs in the preheated oven at 180 ° C (350 ° F) for 10 minutes.</li><li>Arrange the salmon, chicken skewers, meatballs and any other ingredients of your choice in the small ramekins in your <a href="https://www.blog.stokesstores.com/en/thinkswiss-2-in-1-grill-and-raclette.html">thinkkitchen Raclette </a>or cook them directly on the baking sheet.</li><li>Season to taste and cover with cheese slices.</li><li>Cook until the cheese is melted and begins to brown.</li><li>Serve with a green salad with bright, fresh vegetables.</li></ol>
