Next to every main course is a wonderful side dish, often forgotten. So we thought we would highlight some amazing side dish recipes.</p>

<p>Stokes is collaborating with two chefs, Gil MacNutt and Jeremy Lafortune, from the Montreal-based corporate start-up <a href="http://bennalex.com">Ben&amp;Alex</a>. They are specialists in hyper personalized daily menus and have created some amazing side dishes to remember! It is important to have both vegan and vegetarian-friendly options, so we have a menu that will please everyone! On the menu: Fish and Potato Croquettes, Shaved Fennel, Asparagus and Endive Salad as a vegan option and Warm Pea and Preserved Lemon Salad with Pea Shoots, as a vegetarian option. Peel potatoes and cut into cubes. Add 2 tablespoons of olive oil to pan and cook fish for 3 minutes on medium heat, flip and cook for 2 more minutes.</span></div></li><li id="wprm-recipe-5191-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Remove fish from pan and let it rest, add red onions, garlic and leeks to pan and cook on medium heat for an additional 5 minutes.</span></div></li><li id="wprm-recipe-5191-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In a bowl, mix boiled potatoes, fish, eggs and vegetable mix. Add half a cup of finely diced parsley, half a cup of finely diced dill, a teaspoon of paprika, a teaspoon of salt and a teaspoon of pepper.&nbsp;</span></div></li><li id="wprm-recipe-5191-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Mix all ingredients together using electric hand blender or food processor. Form into 50g patties using hands and dip into breadcrumbs.</span></div></li><li id="wprm-recipe-5191-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Cook the oven at 350°F on baking sheet for 15 minutes or until golden.</span></div></li><li id="wprm-recipe-5191-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">While the fish cakes are in the oven, prepare tartar sauce. Finely dice 2 tablespoons of pickles and 2 tablespoons of capers.&nbsp;Mix with 2 cups of mayonnaise, juice from one lemon, 1 tablespoon of fresh dill and 1 tablespoon of fresh parsley.</span></div></li><li id="wprm-recipe-5191-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Serve warm or cold with sauce on side as an appetizer, hors d’oeuvres or side dish.</span></div></li></ul></div></div>

A dish originating from Argentina, chimichurri sauce is a pesto-like sauce that comes in red or green. This sauce is used on all types of meat and can be found regularly on Argentinean tables. Chimichurri, loosely translated as “a mixture of several things in no particular order”, is a mix of fresh herbs, garlic and golden extra-virgin olive oil, with a slight tang of vinegar and a kick of chili pepper. What better companion to the delicate texture and flavour of a perfectly cooked rack of lamb?</p>

Add a big pinch of salt and baking soda, bring to a boil. Boil potatoes about 10 minutes. After attending the Pacific Institute of Culinary Arts in Vancouver B.C. and much traveling, I pursued my career by cooking my way through some of the top restaurants in a city known for it’s culinary scene, Montreal.</em></p>
<p><em>Having been raised in a multicultural household, the urge to explore different foods came to me very young. I started researching international cuisine and focusing on what I call “the anthropology of food” to find stories, myths and legends surrounding the popular dishes of today. </em></p>
<p><em> </em><em>I am now putting my knowledge to good use as a head chef, culinary instructor and coordinator of the President’s Choice Cooking School at Provigo in Lasalle. I am currently focusing on teaching children as young as two, to adults in their golden years, how to find their way around the kitchen and appreciate flavours and techniques from days of old. </em></p>
