Ingredients:
For the root vegetables:
- 2 carrots
- 1 turnip
- 2 sweet potatoes
- 2 parsnips
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon Provence herbs (or any herbs of your choice)
- Salt and pepper, to taste
For the gravy:
-Option 1: Store-bought poutine gravy (available in grocery stores)
-Option 2: Homemade gravy (recipe below)
For homemade gravy:
- 2 tablespoons butter
- 2 tablespoons flour
- 1 ½ cups (375 ml) vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- Salt and pepper, to taste
Topping:
- Cheese curds
- Fresh parsley, chopped (optional)
Instructions:
Preparing the vegetables:
–Peel and cut the carrots, turnip, sweet potatoes, and parsnips into sticks to resemble fries.
-Toss the vegetables in a bowl with olive oil, smoked paprika, herbs, salt, and pepper.
-Preheat the air fryer to 180°C (350°F).
–Cook the vegetables in batches, avoiding overcrowding, for about 15 to 20 minutes, shaking the basket halfway through to ensure even crisping.

Preparing the gravy:
- Option 1: Heat the store-bought gravy according to the package instructions.
- Option 2: For homemade gravy, melt the butter in a saucepan over medium heat, add the flour to create a roux, then gradually whisk in the vegetable broth, soy sauce, and apple cider vinegar. Simmer for 5 to 7 minutes until thickened. Season with salt and pepper.
Assembly:
-Arrange the cooked root vegetables on a plate or serving dish.
-Generously top with cheese curds while the vegetables are still hot.
-Pour the hot gravy over the cheese curds to help them melt.
-Garnish with fresh parsley for a finishing touch (optional).

Tip:
For extra crispy vegetables, avoid overloading the air fryer basket and shake it frequently during cooking. This air fryer method uses less oil while keeping the vegetables crunchy and delicious, with the option of using store-bought gravy for added convenience.
