Priscila’s Kitchen Cinco de Mayo: Holy Guac-a-mole!

Nothing says party better than a huge bowl of the world’s best guac and a margarita pitcher!! So to help you celebrate deliciously this Cinco de Mayo, I’ve got some easy recipes for both!

 

For the guacamole, you’ll get a touch of sweetness from the mango that balances the healthy dose of spice really nicely. I like my guac pretty spicy, so if you are not into breathing fire like a dragon, cut the jalapeno & chilli pepper quantity in half and gradually add more until you’re happy with the spice level.

Sweet & Spicy Guacamole
Ingredients
  • 3 ripe avocados
  • 2 tbsp fresh lime juice between half to a full lime
  • 3 tbsp minced red onion
  • 1 jalapeno, stem and seeds removed, minced
  • 1/2 tsp dried chili flakes
  • 1/4 cup cilantro, finely chopped leaves and tender stems
  • 1/4 cup diced tomato
  • 1/4 cup ripe mango, finely diced
  • 1/2 tsp flaked sea salt
  • A dash of freshly grated black pepper
Instructions
  1. Cut the avocados in half. Remove seed and scoop out the flesh with a spoon, into a bowl.

  2. With a fork, roughly mash the avocados, I prefer to keep it a little chunky.

  3. Add the lime juice and mix well. The acidity of the lime juice will delay the avocados from turning brown, balances the rich flavours and adds brightness.

  4. Add the chopped onion, cilantro, mango, jalapeno and chili peppers. Chili peppers vary individually in their hotness. So as I mentioned, start with half and add to the guacamole until you’ve reached your desired degree of hotness. 

  5. Add salt & pepper to taste. 

  6. If you are making this ahead and storing in the fridge, wait to add the tomatoes right before serving. I like to add half the diced tomatoes in the guac and sprinkle the rest on top.

  7. Serve with tortilla chips or veggies and dig in!

 

Tip: Make more than you think you need… it disappears quickly!

Next up is the Smokey Margarita. Sweetened with maple and rimmed with smokey salt for that ‘je ne sais quoi’ something special! You can blend it or shake it on ice… either way the fiesta is on when these are on the menu!

Smokey Margarita
Servings: 4 people
Ingredients
  • 12 ice cubes
  • 9 oz tequila
  • 6 oz freshly squeezed lime juice
  • 3 oz maple syrup
  • 1 oz orange liqueur
  • 2 portions of smoked salt & maple sugar mixture
Instructions
  1. Add half the ice cubes and all the liquids (leaving a small portion of lime juice to rim the glasses) in the thinkkitchen Rocket Power Blender, blend on high until broken down. 

  2. Add the remaining ice cubes and blend for 60-90 seconds, until frothy and smooth.

  3. Use smoked salt & maple sugar mixture to rim the glasses.

  4. In two small plates, add in one plate a squeeze of lime juice, and in the other half & half proportions of the smoked salt & maple sugar mix (use regular flaked salt and white sugar as an alternative). 

  5. Dip your empty glass first in the lime juice followed by the salt mixture, making sure to coat about 1/4 inch of the entire rim.

  6. Fill the rimmed glasses with the blended margarita and garnish with a lime wedge.
