Grilled Strawberry, Arugula, and Brie Panini

Strawberry season is so short—that’s why we intend to make the most of it every year. The delectable berries are always good on their own as a healthy snack, or in baked goods, but putting them in savoury meals like salads and sandwiches is just another way to enjoy their sweet taste and to add more fruit servings to your daily diet.

Balanced by the creaminess of the brie and the peppery goodness of the arugula, the strawberries shine without overpowering in this recipe—sheer summer perfection!

Wanna try? Here’s what you’ll need:

Ingredients:

  • 1 tablespoon butter
  • 2 pieces of your favourite bread
  • 2.5 ounces brie, sliced
  • 2-3 strawberries, sliced
  • ¼ cup arugula

Preparation:

  • Butter the outside sides of both pieces of bread.
  • While your panini press is heating, place the brie, the strawberries, and the arugula on one slice of bread. Top with the second slice of bread. 
  • Place your sandwich in the press and heat for about 2-3 minutes or until the brie starts to melt.
  • Remove from the press, cut in half with a sharp knife, and serve hot.

And just like that, a delicious lunch that feels fresh and out of the ordinary. Pair this sandwich with a summer salad, your favourite crudités, or maybe even a gazpacho.
