Fresh, Green Salad

If you’re looking for a detox this season, this salad has all the nutritious ingredients you need to feel reset. We want to be eating fresher, healthier meals this month to set the tone for the rest of the year and eat something lighter compared to our Holiday feasts we just had. This is the month where salads become your new best friend!

There are so many variations of salad you can make, light salads, Poke salads, heavy, chunky, chopped salads and even warm salads. Today, we’re going to share a recipe that’s super quick and easy to get started on your salad journey. This recipe has no frills or fuss but packs a punch in flavour and freshness! The best part: it’s entirely customizable! Swap out any veggies or fruits that you want to add or remove.


Here’s what you need:

Ingredients:

Dressing:

½ cup olive oil 

1/3  cup lemon juice

1 shallot, minced

1 Tablespoon Dijon mustard

1 Tablespoon honey (sub with Maple Syrup for Vegan option)

1/2 teaspoon dried Italian spices 

½ teaspoon coarse sea salt

¼ teaspoon white pepper


Salad:
1 head romaine lettuce

1-2 Tablespoons capers

4 small cucumbers

1 bunch radishes

2 Tablespoons hemp seeds

Preparation:

Dressing:

In a small bowl, whisk all ingredients together. OR you can also put all the ingredients into a glass jar with a tight fitting lid. Shake vigorously until ingredients are well incorporated.

Store dressing in fridge for up to two weeks

Salad:
Stack romaine and julienne.

Thinly slice radishes by hand or use a mandoline.

Cut cucumbers into thin rounds or use a vegetable peeler or mandoline for long strips.

Mix romaine, cucumbers, radish and capers in a large bowl.

Sprinkle hemp seeds on top, drizzle with dressing and mix well.
