<p><strong>Preparation:</strong></p>



<ul class="wp-block-list"><li>In a blender, combine heavy cream, sweetened condensed milk, Irish whiskey, instant coffee, chocolate syrup, vanilla extract, and almond extract. While we may only be watching the big parade from our TVs this year, it doesn’t mean you have to compromise on your St.Patrick’s Day festivities at home! Turn your kitchen into an Irish pub with this easy and savoury recipe for corned beef, using a <a href="https://www.blog.stokesstores.com/en/thinkkitchen-precision-sous-vide-vacuum-cooker.html">sous-vide</a>.</p>

<ul class="wp-block-list"><li>3 lbs corned beef brisket, pre-brined, with pickling spice packet (a blend of &nbsp;mustard seeds, allspice, coriander seeds, cloves, ginger, red pepper flakes, bay leaf and cinnamon)</li><li>1 cup beef stock</li></ul>



<p><strong>Preparation:</strong></p>



<p><strong><em>Sous-Vide:</em></strong><strong><em><br></em></strong></p>



<ol class="wp-block-list"><li>Set <a href="https://www.blog.stokesstores.com/en/thinkkitchen-precision-sous-vide-vacuum-cooker.html">sous vide machine</a> to 82C/180F.</li><li>Rub pickling spice packet on the fat side of the corned beef. Put the corned beef and beef broth in a freezer bag, and remove the air using a vacuum sealer or the displacement method. Drop the bag in the bath for 10 hours.</li></ol>



<h4 class="wp-block-heading"><strong><em>To Finish:</em></strong></h4>



<ol class="wp-block-list"><li>To finish the corned beef, heat up the skillet on medium high and sear all sides. Alternatively, place the corned beef under the broiler for 1 to 2 minutes. Make sure to watch closely to ensure the meat does not get burned.&nbsp;</li><li>Serve with cabbage and potatoes, and enjoy the most succulent corned beef, ever!</li></ol>

										<content:encoded><![CDATA[<p><span style="font-weight: 400;">This Cheesy Avocado Pesto Pappardelle with Whipped Black Pepper Ricotta is so creamy, it almost has the consistency of a nice alfredo. If you want your pasta to have more pesto and less avocado flavour, double the pesto ingredients and/or cut the avocado down to half. I chose a pappardelle pasta because of the large flat surface. It is the perfect vessel for allowing the sauce to really coat the pasta. Penne or Fettuccine would be lovely as well! Most of all, this pasta is a beautiful bright green and perfect for St. Patty&#8217;s Day!</span></p>

Pulse. Once the basil and nuts are chopped small, blend in the avocado.</div></li><li id="wprm-recipe-6127-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">When the water is boiling, add pasta.</div></li><li id="wprm-recipe-6127-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">While pasta is cooking, add the ingredients for the whipped ricotta into the base of a <a href="https://www.blog.stokesstores.com/en/thinkkitchen-promix-plus-stand-mixer-silver.html" target="_blank">stand mixer</a> fitted with the whisk attachment. Whip on high.</div></li><li id="wprm-recipe-6127-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">When pasta is done, reserve 1 cup of pasta water.</div></li><li id="wprm-recipe-6127-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">(Hint: I didn't actually use the water in this recipe but it's good practice to do this every time you make a pasta with sauce so you can easily fix the consistency of the sauce to your liking.</div></li><li id="wprm-recipe-6127-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">After draining pasta, return to the pot and add butter, cream and brie. Toss pasta to melt the cheese and make a sauce. Add the pesto and toss until the pasta is coated.</div></li><li id="wprm-recipe-6127-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Serve with a dollop of whipped ricotta, chopped walnuts, and some lemon zest.</div></li></ul></div></div>
