In the fall and winter months, incorporating warm elements to your salads, like roasted vegetables, is a great way to add richness, warmth and depth in flavour. This roasted sweet potato and kale salad is perfect as a meal on its own, or as a side dish on a beautiful holiday tablescape.
Here’s what you need:

Ingredients:
6 cups Kale
2 lbs Sweet potatoes
¼ cup Pumpkin seeds
½ cup crumbled Feta
¼ cup thinly sliced Green onions
¼ cup chopped Parsley
¼ cup Olive oil
¼ cup Tahini
2 tbsp Lemon
2 tbsp Maple syrup
1 tbsp Dijon mustard
¼ tspGarlic powder
¼ tsp Onion powder
Salt & pepper
Preparation:
In a large bowl, toss the sweet potatoes with 2 teaspoons of oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper and add in your spices. Put everything into your air-fryer basket.. Cook at 400°, shaking the basket or tossing them a few times, until they’re fork tender and golden, about 15 minutes.
For the dressing, whisk the tahini with lemon juice, maple syrup, dijon mustard and olive oil. Add kale and massage into dressing to soften a bit. Add in your crumbled feta, parsley and green onions and toss all together with the roasted sweet potatoes.
