Ah, gnocchi! Little balls of heaven with a name you’re never 100% sure how to pronounce (it’s nyow·kee, BTW)! They’re probably one of your restaurant faves, but what if we told you they were actually fairly easy to make at home? *gasp*
Yes, it’s true! Follow these simple instructions to turn potatoes and a handful of other common ingredients into yummy gnocchi. Then, cover with your favourite sauce, either homemade or store bought.
Wanna try? Here’s what you’ll need:

Ingredients:
- 2.2 lbs (1 kg) of your favourite potatoes (we recommend russet, but any kind will do)
- 3 cups minus 1 tablespoon (350 g) of all-purpose flour, plus a little more as needed
- Your favourite sauce (think pesto, tomato, cheese, or anything else you’re into!)
- Semolina flour to dust the baking sheets
Preparation:
- Wash the unpeeled potatoes before placing them in a saucepan, covering with cold water, and bringing to a boil.
- After the water comes to a boil, keep cooking for about 20 minutes. During that time, put all of your flour in a neat pile directly on your clean work surface.
- Drain the potatoes and, while they’re still hot, mash them with a potato ricer before adding them to the flour.
- Work the flour and the potato together until you get a soft, pliable dough. If your dough is too soft and is hard to work with, add more flour.
- Roll out your dough into ¾-inch-thick logs before cutting them into fairly square pieces.
- (Optional step) To create decorative ridges on your gnocchi, gently press down on each piece with the tines of a fork.
- Dust a baking tray with semolina flour and place the gnocchi on the tray, coating both sides of the pieces. The gnocchi can be cooked right away, or can stay out about 2 – 3 hours before it is cooked.
- When ready to cook, bring a large pot of salted water to a boil and add the gnocchi. After 2 or 3 minutes, the gnocchi pieces will start to float. Using a slotted spoon, remove them immediately as they start floating and place them in a pan with the sauce of your choice. Mix well, serve, and enjoy!
