When you think of a cold soup recipe, you might immediately think of gazpacho. But there are so many other types of delicious cold or chilled soups and recipes that you can prepare. This chilled cucumber dill soup is so savoury, each spoonful is packed with so much delicious flavour.
Here’s how to make it:

Ingredients:
3 cups chopped cucumber (seeded and peeled)
1 ripe avocado, peeled and pitted
1 cup low-fat plain yogurt
¼ cup chopped fresh dill
2 tablespoons lemon juice
½ teaspoon salt
¼ teaspoon ground pepper, plus more for garnish
4 teaspoons extra-virgin olive oil
Julienned radishes for garnish
Preparation:
Combine cucumber, avocado, yogurt, dill, lemon juice, salt and pepper in a blender. Blend on high until smooth. Refrigerate the soup until chilled.
Once it’s ready to serve, drizzle some olive oil on top and garnish with more pepper and radishes for some texture – and because it looks pretty!
