How to Give Everyone Some Serious Lunch Envy

Packed lunches donʼt have to be boring, make lunch time a real treat while making all your coworkers a little envious of whatʼs inside your lunch box with these tasty ideas….

Granola & Fruit Parfait

1/3 chia pudding, Greek yogurt or soy as the base, 1/3 fresh fruit and 1/3 homemade granola. Using a container that has built in compartments to keep the granola dry until you are ready to devour it, ensures you get that yummy granola crunch!

If youʼve never made homemade granola, it’s really simple… hereʼs an all around fam-favourite… nut-free, so school safe, yet gourmet enough that your co-workers will be eyeing that delicious parfait you packed.

Gluten-Free Granola
Ingredients
  • 1 1/2 cups oats
  • 1/2 cup cooked quinoa
  • 1/2 cup pumpkin seeds
  • 3/4 cup chopped dates
  • 1 tbsp coconut oil
  • 1 tbsp honey
  • Pinch of salt
Instructions
  1. Melt the coconut oil and honey. Mix all the ingredients in a large bowl. Spread over a baking sheet and bake at 425°F for 10-12 min or until golden. Let cool and transfer to an airtight container. Store at room temperature up to 10 days.

 

Make Ahead Salad

Bringing salad for lunch can be tricky, because let’s face it… no one likes soggy salad. The key is to keep your dressing and/or any dry ingredients in separate containers, combining them just before you are ready to eat!

One of my favourite combos is kale, tomatoes, cucumbers and roasted chickpeas, with a simple balsamic & evoo dressing.

Roasting chickpeas is simple and the best part is they keep for days making it easy to add in a bunch of recipes! They are a great source of protein and fiber, which means youʼll be energized all afternoon!

Hereʼs what to do:

Use either boiled or canned chickpeas, be sure to rinse well and let some of the excess moisture air dry. Drizzle some evoo and add some of your favourite spices. I like to do garlic, turmeric, marash chili and flake salt but the combinations are endless so go with a combination that speaks to you. Mix well and place on a baking sheet and bake at 425°F for 15-20 min or until crispy. Let cool and then store in an airtight container up to 10 days.
