September Apple Pie Recipe

September has finally arrived! To celebrate, here is our recipe for one of our favorite desserts: apple pie!

Pie Crust:

  • 2 1/2 cups (315 grams) flour
  • 1 tablespoon (15 grams) sugar
  • 1 teaspoon (5 grams) table salt
  • 2 sticks (8 ounces) of unsalted butter, cold
  • 1/2 cup iced cold water

For the filling:

  • 4 granny smith apples
  • 1/3 cup brown sugar
  • 1/4 cup all purpose flour
  • 1/8 tsp ground cinnamon
  • a pinch of ground nutmeg
  • 1/8 tsp ground ginger
  • 2 tbs cold unsalted butter, diced

For the crumble:

  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1/4 cup (packed) golden brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 6 tablespoons chilled unsalted butter, cut into 1/2-inch cubes


Preparation:

  1. Whisk together the flour, the sugar and the salt with your Think Kitchen whisk.
  2. Dice the two sticks of butter, and sprinkle over the flour.
  3. In a food processor, pulse together the butter and the flour.
  4. Take 1/2 cup of iced cold water and pour over the butter and the flour mixture. If 1/2 cup of water is not enough to gather the dough together, add another 1/4 cup of iced water slowly. Knead the dough.
  5. Roll out the dough into a 1″-1.5″disk, wrap in plastic wrap, and let the dough chill in the fridge for at least 2 hours.
  6. While waiting, peel and core apples with your Think Kitchen red apple machine and your OXO apple corer. In a bowl, add apples, sugar, cinnamon, nutmeg, ginger, flour and toss to combine. Set aside.
  7. Take the dough out after 2 hours, and roll it out with a rolling pin. If the dough is getting stuck to the rolling pill or the table (which it probably will), sprinkle some flour on it.
  8. Press the dough into your Remy Olivier elite pie dish and trim the excess edges. The pan itself has decorative ridges, so you don’t even need to do it yourself!
  9. Add apples to the pie dough.
  10. For the topping: Blend all the ingredients in a food processor (or use your hands to squeeze the butter into the mixture until it forms a wet sand like consistency.
  11. Add topping on top of and around the apples.
  12. Bake pie for 45 mins at 400° degrees.
  13. Serve and enjoy!
